From the Chef: Watermelon Spheres

Spheres ready to refresh our guests’ palate. We blend and sieve the watermelon to get a smooth juice without any clotting.

We mix it with agar-agar to get a gel at room temperature, first heating it, afterwards letting it cool.

With the help of a dropper, we let a few drops fall on cold olive oil. Once our spheres that look a lot like fish eggs are ready, they can be washed with room-temperature water, eliminating every trace of the oil.
